Well…..because I just watched It’s Complicated for the (I don’t want to admit) time and had to make my own. If I owned a bakery/store it would look exactly like Jane Adler’s (Meryl Streep’s character). Perfectly bright, fun, and full of delicious treats that my customers wouldn’t be able to live without. So…since that’s not going to happen I created this Honey Lavender Ice Cream with a slight floral taste that even Jane Adler would be proud to serve!

How to Make Honey Lavender Ice Cream Without an Ice Cream Maker

MAKING ICE CREAM WITHOUTH AN ICE CREAM MAKER-METHOD #1

  1. Place the ice cream mixture in a quart-size resealable bag, squeezing out as much air as possible and sealing tightly.
  2. Place this bag inside another quart bag, again squeezing out as much air as possible and sealing tightly.
  3. Put the bags inside a gallon-size resealable bag and fill with about 4 cups crushed ice, then sprinkle with 4 tablespoons coarse salt. The salt lowers the freezing point of the ice and creates an extra-cold environment that absorbs heat, causing the ice cream base to freeze.
  4. Squeeze out all the air and seal tightly.
  5. Wrap the bag in a towel or put gloves on before shaking vigorously and massaging the bag, making sure the ice is surrounding the ice cream mixture constantly.
  6. Shake for 5 to 8 minutes, or until the ice cream is frozen. The more vigorously you shake, the smoother your ice cream will be.

MAKING ICE CREAM WITHOUT AN ICE CREAM MAKER-METHOD #2

  1. Place the ice cream recipe mixture in a deep stainless steel baking dish and freeze for 45 minutes.
  2. As it begins to freeze near the edges, remove it from the freezer and stir vigorously with a spatula.
  3. Return to the freezer.
  4. Continue to check the mixture every 30 minutes, stirring vigorously as it’s freezing.
  5. If you have a hand-mixer or blender, use one of those.
  6. Repeat this process for 2 to 3 hours, or until frozen.

MAKING ICE CREAM WITHOUTH AN ICE CREAM MAKER-METHOD #3

  1. Make any ice cream base according to the recipe directions.
  2. Instead of churning in an ice cream maker, pour into a ziptop bag, squeeze out all air, and seal.
  3. Freeze, lying flat, until solid.
  4. Remove from freezer and break into chunks small enough to fit into the bowl of your food processor or a high-powered blender.
  5. Pulse until completely smooth.
  6. If adding mix-ins, either fold them in or pulse until desired consistency is reached, then pour into an airtight container.
  7. Cover and freeze until ready to serve.

How to Make Honey Lavender Ice Cream With an Ice Cream Maker

FOR THE HONEY AND LAVENDER: Using local honey is amazing. You can usually find a honey vender at a farmers market. If that’s not an option any type of honey will work. During the summer months famers markets also have venders selling dried lavender.

HONEY LAVENDER INGREDIENT LIST-full printable recipe below in recipe card

  • 1/3 cup honey
  • 1 tablespoon dried lavender flowers
  • 1 quart half and half
  • 1 (14 ounce) can sweetened condensed milk
  • 1 1/2 teaspoons vanilla extract
  • Optional: violet gel food coloring

HONEY LAVENDER INSTRUCTIONS

  1. In a medium saucepan, add the honey, lavender and half and half.
  2. Bring to a gentle simmer; take lavender syrup off the heat, cover and set aside for 15 minutes.
  3. Pour and strain mixture through a fine-mesh sieve and refrigerate until completely cold (8 hours or overnight).
  4. In a medium bowl, whisk cold half and half mixture with condensed milk, vanilla and optional gel food coloring.
  5. Pour into an ice cream maker, follow manufacturers instructions, and churn ice cream.

More About Lavender

For this lavender honey ice cream recipe I used dried Lavender. Using dried lavender flowers vs fresh lavender flowers. If you have fresh lavender in your garden you can use the blooms but be aware that fresh is not as potent as dried. You’ll need to use more and maybe mortar and pestle it a bit to release the oils. The rule of thumb with converting fresh herbs and dried herbs is 2 to 1.

How to Store Honey Lavender Ice Cream

Spoon remaining ice cream into a freezer safe airtight container and place in the coldest part of your freezer until ready to serve.
